If your fitting the frames as well, I just plumbers up the hinge side swing the doors then wedge and fix the lock side of the frame

Also make use of the tab inside the keep to help the latch pull tight into the stops or if no tag just a flat plate, you can get the same effect by cutting the latch mortice with a slight bevel back towards the stops.
