I need a easy quick recipe as want to make a raspberry cheesecake, as I soon will have loads of Raspberries from my raspberry bushes.

I used to make them years ago, but forget how now.

I dont want a recipe that involves baking it in the oven, just the ordinary type, preferably with creme fraiche,

All suggestions welcome. :-)

adapt this recipe


Chocolate and Baileys Cheesecake


Preparation time: 45 mins plus chilling
Serves: 16
Calories/Fat: 556cals/43g
Sodium/Added sugar: 0.1g/32.8g









100g (3 1/2oz) digestive biscuits
50g (2oz) roasted and chopped hazelnuts
15g ( 1/2oz) dark brown soft sugar
450g (1lb) chocolate
60g (2 1/2oz) unsalted butter, melted
50g (2oz) caster sugar
350g (12oz) full-fat soft cheese
450ml (¾pt) double cream, lightly whipped
40ml (1 1/2fl oz) Baileys Irish Cream liqueur For the chocolate sauce
200g (7oz) chocolate
200-300ml (1/3 - 1/2pt) milk
2 tbsp double cream
25g (1oz) caster sugar
25g (1oz) unsalted butter









Process the biscuits, hazelnuts, brown sugar and melted butter to make the biscuit base. Press onto the base of a 20.5cm (8in) diameter spring-release tin.

Melt the chocolate in a bowl over a saucepan of simmering water. Beat the sugar and cheese together until smooth then fold in the whipped cream. Fold this mixture into the melted chocolate then stir in the Baileys Irish Cream. Spoon into the tin and level the surface. Refrigerate for at least 2 hrs until firm.

For the sauce, melt the chocolate in a bowl over a saucepan of simmering water. In a separate pan, combine 200ml (1/3pt) milk, the cream and sugar and bring to the boil, stirring occasionally. Whisking all the time, pour this onto the chocolate. Return the sauce to the pan and boil over a high heat for 15 secs. If wished, add extra milk to thin the sauce. Remove the pan from the heat and whisk in the butter bit by bit.

Serve the cheesecake with the sauce or with crème fraîche and fruit.

Sounds very tempting, :thumbright: will give it a try, not long to go before my raspberries will be ready, the way my cherries are going, it might be a cherry cheesecake I make first. :-)

Going!!!!! They have bleeding gone :cussing:

The fercking birds have had them, my raspberries are covered up with netting, hubby was supposed to have covered the cherry tree branches as well, but said they would be okay.

Tree had loads of cherries on Monday evening, thought I would give them another week or so and they would be ok for picking, looked last night, and they have all gone, I am soooooo bloody angry, this is the second time they have been eaten. :angryfire:

I sympathise with you BD. In my old house I had a walnut tree. It took 15 years for it to grow from a walnut to a nut producing tree. Every year from then on the squirrels stole all of those nuts just before they were ready.

A couple of years ago that happened to our cherry tree - even though it was netted. Just happened to look out of the window and glimsped a grey creature climbing up the tree, thought it was a squirrel, but then spotted the long thin RATS tail.
Delia used to do a raspberry cheesecake using Philedelphia cream cheese, whipping cream and a raspberry jelly, digestive biscuit base - sorry don't remember anymore about it - apart from it was very morish

Shame to hear you lost your fruit! Just have to say - that's a great recipe above, my OH made it for me last summer :-) I'm sure it'll be great with fruit on too.

Hi Jenny, I saw that recipe, as I googled, and there were loads from delia, and a few others, even sainsburys have thier own recipe choices, and there is loads.

Funny enough I picked the raspberries last week, and froze them, went out shoppin and got the phildelphia, double cream and castor sugar, oh and a spare packet of digestive biscuits.
Was going to make one sunday morning, but had to spend hours cleaning up my new floor tiles. (dont ask) :roll:

So, I still have the items, except the cream, but will buy some more this weekend, and give it a go.

I might even try my hand later on, (see how this one turns out) on a 'New York' type of cheescake, apparently you bake these cheesecakes in the oven :shock: , I do like the taste of the 'new York' cheesecase, and if it means baking it, then I will :lol:

Hi Spin, yes, second year running, hubbies fault, he should have put the netting on like I told him, but do they ever listen?........ :wink:

I fancy the one above, but I dont eat chocolate, I love baileys, ( I used to make this years ago, but cant remember the recipe, and tasted exactly the orginal) but am sure I can add something else instead.
