I may now have to look at fitting my shower with a riser kit.
1). Firstly, i have fitted 18mm wbp plywood to the joist floor and this has been securely screwed and noggined to stop any flex. Can i fit a shower tray with riser kit ontop of this? (20mm of adjustability between a minimum height of 140mm and a maximum of 160mm. Please note: This height is to the top of the tray)
2). Its a quadrant shower but the waste will be on the other side, because this is now on a riser kit will it be able to diagonally go across to the other side and along a wall out? Or will i have to look at a waste on the same side as the pipe is going to be run?
My starter questions.

You can go through he wall first and fit a rodding eye. Are you sure we haven't done these questions before

If you have a shower that sits on the floor and you can't get the waste under for any reason (like concrete floors.) you fit a riser kit to rise it off the gournd. Its just legs that go in the bottom and a piece of moulding to hide the new height.
I think the clue is in the name.

No clue in the name, I would assume it was something to do with the shower control.
You can use the kit or build a platform to stand the tray on and then tile it all.

Yes, just put a tee on the change of direction for access.
