Thanks Scruff, Jaeger, John and Steve.
Funnily enough Scruff, I did have to wait 5-10 minutes for the plumbing guy to finish helping another customer. I didn't have to queue at the tills though, nor today when I went back to get some Stanley knife blades (which in the end didn't form part of the solution, see previous post). It may be it's a big store for a relatively small town, which is not in the most densely populated part of the country (north-east England).
John, don't forget that the DIY store guy had the advantage of knowing about the flexi section, which I had only noticed after posting on here yesterday. By the time I got to him, I had this extra photo (attached). I may be wrong but I suspect it is the presence of this flexi section which, being flexible, and with plenty of slack in it, made the old 22mm copper pipe section seem completely unnecessary, and made finding the solution easier.
Another thing I realised after posting yesterday was that this was the cold water pipe all along, not the hot, and the man at the store had the advantage of knowing this - although I don't think that makes any difference, the packaging for these components claims that they work with both hot and cold plumbing.
Speaking of the 'slack' in the flexible section, I tried to make my new assembly slightly shorter than the old section I took out: I thought that cutting the plastic pipe down to 9cm would achieve this. I thought that a shorter assembly would mean that the flexi section would not have to bend left, before bending right again to join the horizontal pipe. I theorised that if my replacement assembly was shorter, the flexi section would only have to curve smoothly down and right from the tap to join it.
However, as you can see by looking carefully in the top left corner of my previous photo (previous post), I don't seem to have cut the pipe short enough to achieve this. If anything the flexi section has to bend even further left before bending right to join onto the horizontal pipe. As a result it was quite difficult to make this connection: the flexi section felt near to the limit of its flexibility, and it I also had to put some upward force on the horizontal pipe to get it to join. So it may be that I will have a problem in the future due to this strain on the flexi section. However, I think I would be able to fix this now
Who knows, maybe I don't even need the section of plastic pipe OR the 15mm coupler. Maybe the flexi section, plus 22x15 socket reducer, are together long enough that they'd be able to reach over to join the existing 15mm pipe.
Steve, I hope you are right that I have just become a DIYer. I'm not that keen yet though, that I'm going to dismantle it all again just to try out this latest theory of mine

If you had the spare length why not put the socket reducer straight onto the copper and do away with the socket
