I have not done much rendering, but when I do I use a mix of 4 plastering sand and 1 cement and I add some plasticiser in with the water.

Apply it thinly, if you try and put too much on at once it will fall off with the weight.

scratch 4-1 sand - cement. Add a waterproofer/plasticiser to the scratch coat, no need in top coat.
Top coat 5-1-1 sand - cement - lime.
If it is going to be cold it would be worth using something like feb wintermix in the top coat or else you'll be standing there all day waiting to rub it up!!
Give the scratch coat a quick rule so you get a even top coat.
Wait til it has firmed off before giving it a rub.
After you have finished rubbing it up go over it with a sponge to finish it off, looks nice when painted.
