Dad was a spark by trade when I was growing up, and a general all round handyman, so I've picked up a few things helping him out..........but he's now no longer here.

My question is, how do I go from the 3 wires from the hanging lamp (earth, black and red), down to 2 for the spotlight?
I've got the power drill and the cutter in order to cut the hole needed in the ceiling, have a drum of 3 core cable sitting around, and I'm thinking I'll be possibly needing a connector block too?

The area in question is further ahead than the existing spot thats at the bottom of the pic.
I'm 6'7" so looking to avoid becoming a contortionist to go up there if I possibly can.

Why?
Why do you want to change from a pendant lamp to a single downlight?

A pendant lamp will illuminate the whole room, a downlight will barely light the room but will point at what is directly under it.

But back to your question, if you must. Red and Black make no difference which way round they go. the 3rd wire is earth, which you new fitting does not require. So put green/yellow sleeving on the earth, and a single choc bloc on the end of it (Or a wago connector, if you have) DO NOT cut the earth off.

No green/yellow sleeving.........ok with electrical tape wrapped around it to cover it?

No!

It may sound a good idea, but trust me it isn't.
After a while (depending on various factors) the tape will either come "dry" and fall off, or the "sticky" will run and the tape will fall off. Trust me, i have seen both happen.

Ebay less than £1.50 for what you want.
Other suppliers are available

so basically take hanging one down, connect black and red to the spotlight and done?

NO, you neglected the earth. And as I said one down light is not a good idea.

I appreciate the concerns about the effects of the downlighter, but its only a box room.....one light is all thats needed.


Black and red wires connected.....and the earth sleeved, is that all?

Sleeved and into choc block.
As said unless you enjoy the dismal prison cell look even a box room needs more than one downlighter. Still, it's easy and cheap to add a few extras when you find it too dark.
