I'm going to be fitting some of these http://www.screwfix.com/p/solder-ring-fitting-reducer-15mm-x-8mm/64553?_requestid=152131 to fit 15mm TRVs on my 8mm pipework. If I make the 15mm compression fitting then make the 8mm solder end, do I risk distorting the olive?

No, but make sure if you use extra solder it does trickle back to the olive nut, but always good to check tighten after applying heat.
