I have several door handles .. and interior side is OK ... but exterior has dulled badly.

These are presumably brass (can't be 100% certain) at least look & feel like.

It will take some effort to polish back up ..... are there any good finishes that will protect them.
I remember doing this on a previous house - bought spray on clear cote lacquer - didn't last 1 winter.

Regular polishing and waxing is probably your best bet.

That is something my Mother did ..... thought we had moved on ... plus would not be good on teh door finish to keep trying to polish handles in situ.
They come with all the blurb talking about protected finish

Doors are Sapele so Stainless would not look good.

I've got handles of the same make (from the hexagon mark on them. I assume that's the brand?)
They're a brass finish. I've never really looked to see if they're actually brass or not.
They've lasted several years now looking OK. Inside and out.
Which is no help to you, but it makes me wonder why your outside ones are so discoloured.
Rural area here.
TBH I'd be tempted to simply replace the handles.
No coating is going to resist a lot of handling, scratching with keys and rings etc.
Life's too short for polishing.

edit. the hex can just be the back of the threaded part - it can also be the Hoppe logo (hex with 2 lines )

iirc there pot metal with a plating, tbf the handles are cheap enough just replace them - they usually have a clear coat that can oxidize and is affected by UV

all you need to do it measure them up
