There's not much to it, but Hoovie thought there were many ways but wanted to know the correct one.

I don't know a correct way to boil an egg.

All I know that you need to know about boiled eggs is:
1) You should make a little hold in the blunt end to let the air out as the egg boils and the air expands.
2) You can tell if an egg is boiled or not by spinning it. A boiled egg will spin and keep spinning for a couple of seconds or more, one that's not will stop spinning quickly.

For me it's boiling water then put the egg in for 2mins 50 secs. The egg should be at room temerature not straight from the fridge.

I have tried boiling a 'dippy egg' two ways.

First way like WM says place egg in boiling water, and timing it for 2 mins or so.

But I find I get the perfect 'dippy egg' if I put the egg in cold water, bring it to the boil, then time it for exactly 2 mins 45 seconds.

In view of her latest bioook, I'm surprised she dosn't suggest opening a tin of eggs.

Her egg recipes are subject to error because you don't know how much water she's using, therefore you can't tell what the rate of cooling is and therefore you can't duplicate her method. Anyway, she dosn't say what size eggs she's using; a larger egg will take longer to cook than a small one.

Anyway, she's not a chef. She's not even a cook IMO, just a journalist.

1st law of thermodynamice : Work --> Heat

And you go to work on an egg!

no one has mentioned egg size. if you like to use soldiers, a large egg (about 75grams) straight out of the fridge - prick hole on top - takes about 7 minutes after immersion in a saucepan rolling boil water, use a qauntity of water than will not significantly drop in temperature when the egg is inserted. note also that the egg will continue to cook after it is removed from the water - evn if you run it under the cold tap for 30 secs or so.
